Who we are

Boahz is the UK’s very first company dedicated to sea-aged wine. We age top quality sparkling wine in our seabed cellar in the English Channel. For at least one year, we let the ideal pressure, depth, darkness, and temperature do the work of refining the wine’s character.

We are not a wine merchant, nor a winery. Our business exists to provide a sea-ageing service to British wine producers. We’re focused on overcoming the complex logistical and regulatory challenges of sea-ageing wine. Our section of the English Channel seabed is safe, secure and perfectly located to maximise the unique advantages of undersea ageing.

What we do

Boahz is a service company that takes some of Britain’s best still and sparkling wines, and further enhances their depth and character. We take care of all of the complex logistics of safely submerging and retrieving your wine from the seabed.

Sea-Ageing affects not only the character of what’s inside the bottle, but outside too. The glass bottle emerges from the depths ‘labelled’ with calcified sealife – giving each bottle a one-of-a-kind uniqueness, that visibly tells the story of its maturation journey.

Before

Your bottles are prepared for submersion, then loaded into a custom-designed cage that exposes them directly to the sea, while keeping them safe from breakage.

After

Your bottles, uniquely encrusted with evidence of their time at sea, are carefully retrieved, rinsed, and returned to you.

During

Your wine is carefully lowered onto the seabed. There, it matures in the dark, cool, high pressure environment, all while kept in motion by the gentle undulations of the sea.

How it works

The seabed naturally provides near-perfect cellar conditions – darkness, pressure, a consistent temperature range and the gentle movement of the ocean. Tastings, and studies have shown that wine develops differently on the seabed – adding a new layer of intrigue to the mystery of wine ageing, and a new chapter to your wine’s story.

Simply put, the sea provides a near-perfect environment for ageing wine. The pressure, consistent temperature and absence of light keep the wine undisturbed whilst the gentle undulations of the sea keep it in near-constant motion. Whilst the concept is new to British waters, it’s been shown elsewhere to change the way that your wine ages, developing the complexity associated with age, while preserving the delicate aromas and flavours that may be lost in a traditional cellar environment.

We’ve worked with marine experts to find the ideal location in the English Channel. The site, near the Isle of Wight has a broad range of depth options, is safe from man-made disturbances and provides the ideal conditions for your wine to develop. Our carefully-chosen location ensures your bottles resurface with a unique new character both inside, and out.
Any wine that benefits from ageing in a traditional cellar will benefit from sea-ageing. Britain’s world-renowned sparkling wines are particularly well-suited for sea-ageing whilst on lees, though it is also possible to submerge them corked and caged. Our expert wine consultant can work with you to help choose the right variety and duration for optimal results.
At least 12 months. That’s enough time for your wine to show a difference in its development, but depending on the variety, and your preference, your bottles can remain on the seabed for a longer period.
